Dr Pepper Cake, YUM!!

We hung out during a rainstorm at a friend's boat house!
Both of my son's birthday is this month. My oldest will be 9 on the 8th and my youngest will be 5 on the 17th! Because they are super spoiled, and I wouldn't have it any other way, it seems like we have a month long celebration!! Yesterday was out was the Boat Outing which was a total blast,  and today I am making a test run on their homemade birthday cake that they are so excited about!


I made this recipe for an 8-in round cake!

Ingredients for batter:
3/4 cup of Dr. Pepper
1/4 canola oil
1/2 stick of salted butter
4 tablespoons of Hershey's Special Dark Cocoa powder) ~ we LOVE chocolate!!
1 c sugar
1 c flour
1/2 teaspoon baking soda
1 egg
1/4 c buttermilk
Remember this is my trial run cake!

1. Preheat oven to 350 degrees (I have a convection toaster oven, so I used it)
2. Spray pan with cooking spray
3. Combine Dr. Pepper, canola oil, butter, cocoa powder, sugar, egg in a saucepan and cook on low to
       medium heat until it starts to simmer. (stir to mix, but not too much)
4. When it begins to simmer, turn off stove and add the flour, baking soda and mix (but not too much)
5. Stir in  the buttermilk
6. Pour in pan and bake for about 20 minutes or until a toothpick can be inserted and come out clean.

While the cake is cooling, you can make the Frosting!!

Ingredients for Frosting:
1/2 stick of salted butter
2 tablespoons of Hershey's Special Dark Cocoa Powder
4 tablespoons of milk
2 cups of Confectioners Sugar (I call it powdered sugar)

1. In a saucepan, combine the butter, cocoa powder, and milk. Stir over medium heat until it is melted and
2. Add the powdered sugar (a little at a time), stirring until smooth.
3. Pour over the cake.
I added some walnuts, before I baked! YUMMY

 This has GOT to be the easiest cake to make, and I am not a baker by any means!!!  I couldn't believe the simplicity of it. I

 have made the trial version, and I will add the frosting when we get ready to eat it tonight with dinner. I will also add a scoop of ice cream just to top it off! I will post the after pictures later tonight! Pin It Pin It
